Chocolate Peanut Butter Cookies

For my first post I thought it would be nice to include my grandson. He loves getting involved with the cooking, particularly when it is for cookies, and especially when he can lick the mixing spoons at the end.

What better combination than peanut butter and chocolate, my grandson would totally agree with this providing honey was also included. We found a recipe containing all three ingredients and we knew we had to make this. Thank you to  “supergoldenbakes” for providing this recipe. Having the 3 core ingredients, we made a slight alteration to the theme and we were ready to start baking together.

My grandson dressed for the occasion with an outfit I recently purchased on a trip to Europe (photos from this trip to be posted shortly). Here is a link to the shop where we purchased this outfit. He looked terrific and definitely the part to help with the cooking.

All the ingredients were measured and ready to go. We made the recipe for the peanut butter insert first, and this was really good. My grandson can vouch for that, it took me all my time to stop him eating them so that we had some left to put inside the biscuits.

We then mixed all the ingredients for the main biscuit and again got the “tick of  approval“ from the young chef as he licked the spoon clean.

Once the ingredients were together in a ball, it was quite easy to put the filling inside a disc of the chocolate mix. As we filled the trays with the biscuits ready to bake my grandson was so excited to know how they would taste once cooked.

After about 15 minutes these cookies were ready to come out of the oven ready to cool down , awaiting the final decision of the younger team member (thanks to watching episodes of Masterchef and Junior Masterchef). We must have done a good job together as the resulting score from mini chef was not only thumbs up but complete silence as he devoured them. All in all a time well spent together.

I decided to display these cookies (what was left), on a plate that belonged to my mother and holds fond memories as a child of goodies made by her. After all cooking is all about family and pleasures shared together.

CHOCOLATE PEANUT BUTTER COOKIES

For the peanut butter centres
  1. 100g smooth peanut butter
  2. 20g rolled oats
  3. 70g icing sugar
  4. 2 tbsp runny honey
For the biscuits
  1. 150g plain flour (I used 100g plain and 50g wholemeal plain)
  2. 130g light brown sugar
  3. 40g cocoa powder
  4. 1/2 tsp baking powder
  5. 1/4 tsp salt
  6. 1 egg (if using wholemeal flour add a little more egg)
  7. 2 tbsp smooth peanut butter
  8. 75g unsalted butter, cubed
  9. 1/2 tsp vanilla paste
Instructions
  1. Preheat oven to 180º C/350º F
  2. Assemble all ingredients ready. Line baking trays with non-stick paper.
Method
  1. Put oats and icing sugar into food processor and grind until fine. Add honey and peanut butter and pulse to just combine.
  2. Take a teaspoon of dough and roll into small balls in hands. Put on one side while you make the outside biscuit.
  3. In a bowl, sift the flour, cocoa, and baking powder, and then add the sugar and salt. Mix by hand or beater until just combined.
  4. Add the butter, peanut butter, vanilla paste and egg and mix gently until the dough forms a ball.
  5. Taking a heaped tablespoon of the chocolate dough, on the palm of your hand flatten into a disc. Put a peanut butter ball in the centre and enclose in the chocolate dough. Roll into balls again and on a lined baking tray flatten cookie into a large disc.
  6. Continue with the remaining dough, and space them apart on the tray (mine did not spread out a great deal)
  7. Bake for 14-16 minutes. (Mine took 15 mins – this will depend upon your oven). The biscuits will still appear a little soft when you touch them, but they will harden as they cool down. Leave on baking tray to firm a little before putting on cooling rack. Cool completely. I dusted with a little icing sugar, but you can leave plain also. Enjoy!
