Everyones Favourite Roast Chicken

I am not sure about your family, but in our house everyone prefers the dark meat on a chicken rather than the white breast. Although the breast meat is good for leftovers and sandwiches, so is the dark meat and we believe has far more taste. 

With this in mind we decided to make our roast chicken dinners one that was liked by all the family. Instead of purchasing a whole chicken we actually bought individual drumsticks and boneless and skinless thigh fillets.

In a large baking dish we would add a little olive oil and toss the chicken pieces in this.   Arrange them so that they sit neatly in the dish, and with the thigh pieces I usually roll them to make them sit better and cook more evenly with the drumsticks.

Decide on your vegetables to go with the chicken, we usually use potatoes, carrots, sweet potato all cut into small pieces and onion cut into quarters. But we have also used pumpkin and cauliflower cut into small florets.

Once the cut vegetables are in the baking dish we usually spray with an olive oil and garlic mix, and then put plenty of fresh rosemary on top. If you don’t have spray oil, you can pour some olive oil into a dish and mix your vegetables around to coat lightly before putting in the baking dish.

We absolutely love the taste of rosemary and we have several plants growing like crazy, so we use a lot. You can if you want also add garlic cloves to roast.

You can just have the roasted chicken and vegetables for your dinner, or if you wish can do additional vegetables. Usually we will either have beans, snow peas, cabbage etc.

Baking can vary depending on how much chicken and vegetables you have put in the roasting dish. We have done it in 40 minutes but also as long as an hour when we have had a very full dish, particularly of vegetables.

What I love the best, is that once you have it in the oven you can get on with other things that you might need to do, check emails, bath children, help with homework, etc.  

Did I mention also that washing up is a breeze, one baking dish and perhaps one pot for the extra vegetables. Because there is little skin on the chicken (in fact if you use all thigh fillets and no drumsticks there is none) you have little fat in the dish. Also the vegetables being on top of the meat are crisp and tasty without being soaked in juice or fat. There is no carving either, just serve and enjoy.

EVERYONES FAVOURITE ROAST CHICKEN

Ingredients
  1. 4 skinless thigh fillets (or 8 if you are not using drumsticks)
  2. 4 drumsticks
  3. 4 small potatoes
  4. 3 medium carrots
  5. 1 medium onion
  6. Small piece of sweet potato
  7. Fresh or dried rosemary
  8. Olive oil
  9. Salt and pepper
  10. Can olive oil garlic spray (optional)
Optional
  1. Pumpkin
  2. Cauliflower florets
  3. Garlic cloves
Instructions
  1. Preheat oven to 200ºC
  2. Cut potatoes, carrots and sweet potato into small pieces (1/2 inch or 13mm) and cut onion into 4 pieces.
  3. Check thigh fillets to make sure there are no bits of bone left inside.
  4. Put small amount of oil in baking dish and toss drumsticks and thighs in it.
  5. Place the chicken drumsticks and thigh fillets (rolled to sit better) evenly around the baking dish. Sprinkle a little salt and pepper over meat.
  6. Place cut vegetables over chicken meat and spray with oil if using (or put small amount of oil in bowl and toss vegetables in this before putting on top of meat).
  7. Sprinkle dried or torn fresh rosemary over everything in baking dish, add a little more salt and pepper.
  8. Place baking dish into hot oven and roast for approximately 40 – 60 minutes. The time taken will depend upon how full your baking dish is with vegetables and meat.
  9. To check if done, remove a piece of potato and make sure it is cooked. If you want crispy brown potatoes you may need to leave in the oven a little longer, it will not dry out the chicken as it is well covered with vegetables.
  10. To serve: arrange a piece of thigh fillet and a drumstick on warmed serving plate with roasted vegetables. If required, you can also cook additional vegetables to serve with this, e.g. beans, snow peas, cabbage etc.
