We have had such an array of weather conditions over the last few weeks. We wondered if we would actually get a real spring this year or whether Mother Nature would give this a miss.
Only a fortnight ago we had hale stones and really cold weather.
However today, looking around outside my home Spring is well and truly here.
Today we had a glorious day with the temperature reaching about 23ºC and clear blue skies. We decided to sit outside and have lunch and enjoy this beautiful weather. Whilst having lunch we noticed 2 ducks along with their 8 ducklings swimming around in the water not far from where we were sat, I had to get my camera to capture this picture.
When I try to hang out my washing, I have a starling flying in and out near my clothesline with its beak overflowing with grubs for its babies. Every time I try to hang out my washing I can hear the babies chirping for the food, but the adult birds stay away until I leave. To get this picture I hid behind my washing and stood as still as I could for quite some time.
Unfortunately for me the nest is in my valley gutters where we have some rotted timber. Hopefully before the birds come back to make nests again next year we will have replaced all the rotted wood.
I also have some beautiful roses in flower, not as good as those at Flemington Racecourse ready for The Melbourne Cup, but still beautiful when in a vase inside for me to admire and smell the perfume.
We love to cook and use fresh produce where possible, and what better than from your own garden. A few weeks ago we purchased a Wall Garden so we could plant some herbs and salad greens to enjoy. We decided that wasn’t sufficient for us, and added a few (a lot actually) of pots growing tomatoes, eggplant, rhubarb, thyme, rainbow chard, basil, rosemary, lemongrass, parsley, kale, kaffir lime, blueberries, strawberries, nashi pears, peppermint just to name a few.
It is so nice to go outside and collect some fresh rocket, watercress, rainbow chard, and not too far off some mesculin and tomatoes to add to our salad.
As you can see we topped our gluten free corn fritters (recipe below) and poached eggs with the rocket and watercress mix, and again for lunch on our delightful roll. Yum!!!
Walking around my garden, there are rhododendrons, pansies and violas in bloom and looking great.
Yes, Spring has definitely “Sprung” at my place.
Tell me how Spring appears at your place.
- 1 egg
- 100ml water
- 100g gluten free flour
- 1 tsp baking powder
- 1/8 cup corn
- pinch of salt
- Any spices you like. Eg cumin, chilli, coriander seed, etc
- Whisk egg and water together.
- Add dry ingredients and stir.
- When combined add corn and mix.
- To cook heat a frypan with a little oil. If you want perfect round fritters use a large egg ring.
- Cook on both sides until cooked through.
- Top with avocado salsa, poached eggs and wild rocket.
