Anzac Cookie – Healthier Alternative

 

I tend to only make Anzac Cookies around Anzac Day. Although I really love the taste of them they are usually very sweet. Whilst reading some of my emails recently I came across a more healthy version using ingredients I am tending to use more and more, including spelt flour, maple syrup and coconut sugar.

                    

As you can see from the pictures above, the unbaked (left) cookies and the baked (right) look very similar.  I wasn’t sure how much the mixture would spread not having made these before, but as you can see they were fine.  Perhaps you could bake them a little more than I did to get them a bit browner, but again I wanted to check how these would be.

I love the taste of these cookies as they are not overly sweet.  They are not as crispy as the usual Anzac Cookies, and on sitting did soften a little more. Whether baking for a little longer would alter this I will have to check next time around, however I really like them. I will definitely be making these again.
